Avocado Chicken Salad

Ingredients

4 servings

1 avocado

½ cup low fat cottage cheese

¼ cup non-fat yogurt

2 tbsp lemon juice

½ tsp salt

½ tsp black pepper

1 clove garlic, minced

4 cups cooked chicken breast, shredded

3 green onions

½ cup chopped cilantro


Directions

Mash the avocado to a chunky consistency. Set aside.

Add the cottage cheese, Greek yogurt, lemon juice, salt, pepper, and garlic to the bowl of a food processor or blender. Process until completely smooth. Add mixture to the mashed avocado.

Stir in the chicken, green onions, and cilantro. Taste and season as needed. Top with grapes or diced tomatoes and onions. Sprouted grains are the most nutritious. As a general rule, the first ingredient shouldn’t be “enriched”. If you need more protein, Aldi has protein bread with 10g/slice.


If you meal prep this, just portion out the chicken salad and toast the bread when you go to eat it. Or just eat it with a spoon. :)
