Ingredients
5 servings
150g white or brown rice, measured dry
25oz (1.6lbs) ground turkey venison, chicken, or 93% lean beef (beef is higher in fat)
Taco seasoning (packet, or chili powder, cumin, paprika, oregano, garlic powder, onion powder, salt & pepper)
1 tbsp lime juice
1 onion, diced
1 cup cilantro, chopped
1 can black beans
1 can corn
1 jalapeño, diced (optional)
20g shredded cheese (bonus points for low fat)
80g salsa
40g light sour cream or 20g guacamole
Directions
Cook rice according to the package. Add the lime juice once most of the water is absorbed.
Dice onion and jalapeño if using. Heat a skillet over medium heat. Add just enough olive oil to coat the bottom (use a paper towel to wipe out the excess if you use too much), and sauté the onions. After a few minutes, add the ground meat and seasonings. When the meat is about halfway done, drain the cans of corn and black beans and add them to the pan.
Once everything is done cooking and cooled off, portion into bowls with the rice and cheese. Add the salsa and sour cream right before serving. (If meal prepping, don't add salsa or sour cream until you have reheated the meal and are about to eat it).
