Sweet Potato Bowl

Ingredients

4 servings:

20oz 93% Ground Turkey

600g Sweet Potato (I used frozen cubed to make it easier)

3-4 Bell Peppers

Guacamole (around 40g per serving)

Olive oil for cooking


Directions

Slice or dice your bell peppers, and sauté them in a pan with a little oil.

After a few minutes, remove the peppers and heat some more oil in that pan to brown the ground turkey, adding salt, pepper, garlic and onion powder.

Cook the sweet potatoes in the microwave, or in the oven for at least an hour if using fresh sweet potatoes.

*If meal prepping, only cook the sweet potatoes for just over half the time. They'll cook the rest of the way when you reheat your meal.

Divide into 4 portions. When ready to eat, add guacamole and mix it up!
