Sweet & Sour Pineapple Stir Fry

Updated: Apr 1

If you want this recipe to align with your specific goals:

If this is eaten as a post-workout meal or if your primary goal is muscle/strength gain, then use 1/4 - 3/4 cups of uncooked rice per serving.

If eaten while cutting, you can take the rice out if it helps you stay in a deficit. Add more pineapple and vegetables if you want more volume.

Ingredients

1 serving

5 oz diced chicken

1/4 cup uncooked rice

1/2 cup pineapple

1 cup mixed vegetables

2 tbsp Sweet and Sour Sauce (I use Burman's from Aldi. That's what will be in the nutrition facts)

Directions

Cook rice according to package

Bake chicken, let cool, and cut into bite size pieces

Heat up some olive oil in a frying pan. Add the vegetables and some garlic and sauté for a few minutes.

Add the chicken, rice, and pineapple to the pan, then the sauce. Stir to combine and to warm everything up, and serve.
